Chef Michael Che of Tsuke Edomae carries on a distinguished tradition of Edomae sushi, following in the footsteps of his mentors, Master Otto Phan of Kyoten (Chicago, IL) and Master Hiroyuki Sato of Hakkoku (Ginza, Tokyo). He sources his fish directly from one of the best fish markets in the world (Toyosu Fish Market, Tokyo). Music has inspired Tsuke Edomae’s philosophy, and Chef Mike is honored to provide nourishment for the guests.
